The kitchen is headed by recently appointed, and highly talented, Head Chef Gavin Austin. Gavin brings a wealth of culinary experience and expertise with him from his previous positions at The Hoste Arms in Burnham Market, Michelin-starred Chez Nico, L’Escargot and the St Pancras Grand. His philosophy is simple; use great quality local produce and show it off at its best to deliver dishes that are delicious and unfussy. As he has worked in both fine dining and gastro-pub environments, the new menu combines the best of both styles of cooking to create a mouth-watering menu that is suitable for all occasions and moods, from the more adventurous to the tried and trusted favourites.
The menus change frequently to reflect the seasonally available produce but highly recommended dishes, when available, include the braised Lutton Farm spring lamb served with crushed potatoes, pea puree, pea shoots and mint jelly; home-made pie with creamed potatoes and seasonal greens; and the roast chicken for two accompanied by sage and onion stuffing, roast duck fat potatoes, seasonal greens, bread sauce and roasting juices which is not only a feast for the taste buds, but a feast for the eyes too. As a child-friendly venue, there is a children’s menu available that offers the kid’s favourites in perfectly-sized portions. The Sunday lunch at Oundle Mill attracts diners from far and wide as it not only offers value for money but also the best roast you will ever eat.
