The menu is Modern British with a blend of contemporary and traditional styling. Starters for example could include a traditional dish of wild mushroom veloute with parmesan biscuits, sautéed wild mushrooms and chervil cream whilst an up to date dish of wild rabbit trifle and lollipop with pea custard, celeriac mash and ginger bread is cutting edge cuisine at its most rebellious. The main course menu is proudly populated with local produce such as fillet of Lincolnshire beef with porcini potato, confit tongue, shallot tarte tatin and baby vegetables or old spot pork loin and belly with sage mash, onion custard, celery shoots and apple black pudding crumble.

Desserts retain that all important sense of fun with offerings such as grilled banana sandwich with peanut butter ice cream, sesame brittle and salted caramel or calvados and raisin pannacotta with apple dip, cinnamon doughnut and buttermilk ice cream. The selection of Lincolnshire cheese is served with an impressive array of accompaniments; celery cress, grape chutney, green apple, pickled walnuts, oat cake, plum bread and black pepper water biscuits.
