Flavoured Butters Recipe

Butter is fantastic! Its extremely diverse in it’s uses and tastes delicious with breads, starters, mains and even desserts. This recipe will show you how you can incorporate flavour and richness into a particular dish with the help of flavoured butters. These can be used for several dishes. For example, if you’re cooking a steak, a beautiful Bordelaise butter would complement the steak perfectly! If you’re cooking lamb, then accompany it with an amazing mint and thyme butter, or if you are cooking a cottage or shepherd’s pie, an amazing smoky tomato and chilli butter will work magically! Flavoured butters are brilliant and versatile because they are packed with richness, they thicken up sauces, they come in a diverse range flavours to be made for any type of dish, and finally, they are easy and inexpensive to make!

Ingredients:

Smoky Tomato and Chilli Butter:
250g Softened Butter
1/2 Tablespoon Olive Oil
3 Tabslepoons Somked Paprika
2 Tablespoons Tomato Ketchup
1 Teaspoon Chilli Powder
1 Tablespoon Ground Cumin

Method: Mix all ingredients together. Wrap in cling film and chill.

Parsley and Garlic Butter:
4 Tablespoon Chopped Parsley
4 Tablespoons Finely Chopped Garlic
250g Softened Butter

Method: Mix all ingredients together. Wrap in cling film and chill.

Bordelaise Butter:
250g Softened Butter
75g Finely Chopped Shallot
190ml Red Wine

Method: Place your finely chopped shallots in a pan along with the red wine and reduce until completely dry. Allow shallots to cool then mix into the softened butter, wrap in cling film and allow to cool.

These butters are a fantastic alternative from a classic butter, and give a delicious twist  on your usual dishes whether you have an adventurous palate or not. The parsley and garlic butter can be used for a lot of things including garlic bread, risotto and new potatoes. The bordelaise butter will compliment a rich red wine or shallot butter (which is perfect to add to sauces). Or how about placing it on top of red meat to finish cooking? Or enrich stews and casseroles with a tasty butter which can also act as a thickener. Last of all, the slightly unusual smoky tomato and chilli butter is a tantalizing enhancer for any dish such as chilli con carne, shepherd’s pie, cottage pie or even lasagne. The possibilities are endless!
